1 avocado, 1 red onion, 1 lime, 1 orange, 3 tbsp., sesame oil, 450 g Jonah crab claws, a knob of butter for frying (approx. 25 g), 1 clove garlic, 1 small red chili, seasonal lettuce leaves.

Dressing: Squeeze the juice from the lime and orange and stir in the sesame oil. Season with pepper. Leave to infuse for approx. ½ hour.

Preparation: Dice the avocado and finely chop the red onion. Halve and deseed the chili. Remove the shell from the crab claws (pre-cut) and remove the meat. Finely chop the chili and garlic and sauté for approx. 2 min. Brown the crab meat in the mixture over a gentle heat for approx. 3–4 minutes. Mix the salad, add the red onion and avocado as well as the warm crab meat. Drizzle the dressing on top and serve with warm baguettes.

Ingredienser 2 personer:

1 Avocado, 1 rødløg, 1 lime, 1 appelsin, 3 spsk. Sesamolie, 450 g Jonah krabbekløer, lidt smør til stegning (ca. 25 g), 1 fed hvidløg, 1 lille rød chili, årstidens salat.

Dressing: Pres saft af lime og appelsin og rør sesamolien i. Smag til med peber. Lad den trække i ca. ½ time.

Tilberedning: Skær avocado i tern og snit rødløget fint. Halver chilien og tag kernerne ud. Fjern skallen af krabbekløerne (er forskårne) og tag kødet ud. Hak chili og hvidløg fint og svits på panden i ca. 2 min. Brun krabbekødet heri i ca. 3-4 minutter under svag varme. Salaten mixes, kom rødløg og avocado i og tilsæt det lune krabbekød. Dryp dressingen ud over og server medlune flütes.
