2 fillets per person.
Roll the fillets and steam for approx. 3–4 min. over a small amount of salted water with the lid on. Chop fresh, seasonal vegetables (e.g. leeks, carrots, mushrooms, etc.) into suitably sized pieces and steam or blanche them so they are still crisp.
Serving suggestion: small peeled potatoes, lemon, a sprinkling of chopped parsley and Hollandaise sauce.

Fileterne rulles og dampes i lidt vand med salt under tætsluttet låg i ca. 3-4 min. Skær årstidens friske grøntsager, f.eks. porrer, gulerødder, champignon o.l. i passende stykker og sprøddamp eller blancher urterne.
Serveres med små pillekartofler, citron, et drys hakket persille og f.eks. sauce Hollandaise. Rødspættefiler, skrubbefileter eller isingfileter kan anvendes.
