Steam the hoki portions in liquid comprising 100 ml water, lemon, white wine and salt until the fish is milky white (approx. 6–8 min. from defrosted state). Slice boiled potatoes, apply clarified butter and oven-bake for approx. 20 min.

Serve with seasonal vegetables and a melted butter and herb (dill) sauce.

Beetroot sprout salad:

Grill 2 slices of squash and season with salt and pepper. Mix the beetroot sprouts with a little lemon juice. Roll the squash and fill with the beetroot sprouts.

Recipe DK:

Hoki portionerne dampes i en fond af 1 dl vand, citron, hvidvin og salt til fisken er mælkehvid (ca. 6-8 min. fra optøet tilstand). Kogte kartofler skæres i skiver, smøres med afklaret smør, bages i ovn i ca. 20 min.

Hertil serveres årstidens grøntsager og en sauce bestående af smeltet smør blandet med krydderurter (dild).

Rødbedespiresalat:

2 skiver squash grilles og krydres med salt og peber. Rødbedespirerne blandes med lidt citronsaft. Squash rulles og spirerne lægges i.
