Allow 2 fillets per person.

Fold the plaice fillets and dust with flour. Season with salt and pepper. Fry in half butter and half rapeseed oil for approx. 2–3 min. each side.

Serve with small butter-fried shallots/pearl onions, seasonal vegetables, parsley potatoes and mustard cream.

Mustard cream:

reduce a little fish stock and whipping cream. Season with fish mustard, salt and pepper.

Recipe DK:

Beregn 2 fileter pr person.

Rødspættefileterne foldes og vendes i mel. Kryd’r med salt og peber. Steg i halv smør og halv rapsolie ca. 2-3 min. pr side.

Server’ med små smørstegte skalotte/perleløg, årstidens urter, persillekartofler og sennepsfløde.

Sennepsfløde:

lidt fiskefond og piskefløde koges ind. Smages til med fiskesennep, salt og peber.
