Serves 2.

Rinse 2 fillets and divide into 4. Arrange in a pan[Ed1]  on fresh spinach leaves (rinsed and ripped) together with 4 spring onions (cleaned and cut into suitably sized pieces). Add approx. ½ cup water and a little salt and steam under a tightly-sealed lid for 4–5 min. Serve on preheated plates on a bed of spinach, then the fillets; pour soy dressing over the fillets and finish with freshly milled pepper.

Soy dressing: ½ stem lemongrass, finely chopped, 1 tbsp. fresh, finely grated ginger, 50 ml sherry, 1 tbsp. red wine vinegar, 2 tbsp. soy. Mix all ingredients and chill ready for use.

2 fileter skylles og deles i 4. Arranger dem i en gryde på friske spinatblade (skyllet og rippet) sammen med 4 forårsløg (renset og skåret i passende stykker). Ca. ½ kop vand og lidt salt kommes ved og damp under tætsluttende låg i 4-5 min. Anret på varme tallerkner med spinat nederst, herpå fileterne som overhældes med soja-dressing og top op med friskkværnet peber.

Soja-dressing: ½ citrongræsstilk finthakkes, 1 spsk. frisk fintrevet ingefær, ½ dl sherry, 1 spsk. rødvinseddike, 2 spsk. soja. Alle ingredienser blandes og stilles på køl til anvendelse.
