Dust the fillets with rye flour and fry in butter (2–3 min. each side). Season with salt and pepper.

Serve with herb potatoes, creamed herbs and seasonal vegetables.

Herb potatoes:

Cut raw potatoes into slices/wedges, turn in oil and season with fresh herbs. Finish in the oven, approx. 25 min. at 180°C.

Creamed herbs:

Stir 100 ml crème fraîche and 2 tbsp. mayonnaise with finely chopped herbs (e.g. parsley, dill, chives, lemon balm or basil). Season with a little white wine, lemon juice, salt and pepper.

Recipe DK:

Vend fileterne i rugmel og steg i smør (2-3 min. på hver side). Krydr med salt og peber.

Hertil serveres krydderurtekartofler, krydderurtecreme og årstidens grøntsager.

Krydderurtekartofler:

Rå kartofler skæres i skiver/både, vendes i olie og krydres med friske krydderurter. Færdiglaves i ovn, ca. 25 min. ved 180°C.

Krydderurtecreme:

1 dl creme fraiche og 2 spsk. mayonnaise røres med finthakkede krydderurter (f.eks. persille, dild, purløg, citronmelisse eller basilikum). Smag til med lidt hvidvin, citronsaft, salt og peber.
