Serves 2.

Rinse 2 fillets and pat dry; season with salt and pepper. Dust the fillets with rye flour and pan-fry in half butter, half rapeseed oil for approx. 2½ min. each side.

Clean and rinse 2 leeks, cut into rings (use as much of the green part as possible).

Melt 50 g butter in a pan and fry 100 g diced bacon until crispy. Add the leek rings and simmer with the lid on for 3–4 min. Season with salt, pepper and a little sugar; just before serving, add a dash of whipping cream.

Small peeled potatoes go well with this dish. Sprinkle with a little parsley if desired.

2 pers.

Skyl og aftør to fileter, kryd’r med salt og peber. Vend fileterne i rugmel og steg på pande i halv smør og halv rapsolie i ca. 2½ min på hver side.

2 porrer renses, skylles og skæres i ringe (brug så meget af det grønne som muligt).

I en gryde smeltes 50 g smør og 100 g bacon i tern ristes til de er sprøde. Kom porre-ringene i og damp under låg 3-4 min. Smag til med salt, peber og lidt sukker og lige før servering tilsæt lidt piskefløde.

Små pillekartofler er velegnet til denne ret. Drys evt. med lidt persille.
