Rinse 2 fillets, pat dry and season with salt and pepper.

Add plenty of rapeseed oil to a pan, approx. 250 ml (enough to cover the fish). Heat to approx. 160°C.

Turn the fillets in batter (flour, water, oil and 1 egg to produce a thick viscous mass) and add to the hot oil. Fry until golden, and turn the fillets. When they are crisp and golden, place on paper towel to allow excess oil to drip away.

Serve with stir-fried bell-peppers, boiled rice and tomato sauce.

Tomato sauce: Finely chop 1 clove garlic and 1 small shallot and sauté in a knob of butter. Add 1 small tin of chopped tomatoes and cook to a suitable consistency. Season with salt and pepper, add finely chopped parsley and a little knob of cold butter.

2 stk fileter skylles, aftørres og krydres med salt og peber.

Kom godt med rapsolie på en pande, ca. 2½ dl (skal kunne dække fisken). Varmes op til ca. 160°C.

Fileterne vendes i en meljævning (mel, vand, olie og 1 æg til en tyktflydende masse) og kom dem i den varme olie. Steg til gylden og vend fileterne. Når de er sprøde og gyldne kommes de på køkkenrulle, så overflødigt olie kan dryppe af.

Serveres med lynstegte peberfrugter, løse ris og tomatsauce.

Tomatsauce: 1 fed hvidløg og 1 lille skalotteløg finthakkes og sauteres i lidt smør. 1 lille dåse hakkede tomater kommes ved og koges til passende konsistens. Smag til med salt og peber, tilsæt friskhakket persille og en lille klat kold smør.
