2–3 servings: approx. 250 g battered prawns.

Herb dressing: 100 g mayonnaise, 100 g crème fraîche 36% and a little whipping cream. Mix the ingredients and add fresh, finely chopped herbs (4–5 different types). Season with lemon juice, salt and pepper. Put the dressing in the refrigerator to chill until the next day.

Green salad: 2–3 types of lettuce, tomato wedges, some finely sliced bell-peppers, mange-touts, julienne carrots and cucumber. Arrange the lettuce leaves with the other ingredients on the plate.

Heat the oil (1 l rapeseed oil) in a heavy-bottomed pan; add the battered prawns and deep-fry until golden and crispy. Allow to drip on paper towel and arrange on top of the salad. Alternatively, bake for 15–18 minutes on a baking sheet in a preheated oven at 225°C until the prawns are golden and crispy; turn after 8 minutes.

Serve with the herb dressing and warm baguettes.

2-3 personer: ca. 250 g indbagte rejer.

Urtedressing: 100 g mayonnaise, 100 g creme fraiche 36% og lidt piskefløde. Bland ingredienserne og kom friske finthakkede krydderurter (4-5 slags) i. Smag til med citronsaft,

salt og peber. Sæt dressingen i køleskab til dagen efter.

Grøn salat: 2-3 slags salat, tomater i både, lidt fint strimlet peber, sukkerærter, fint strimlet gulerod, og agurk. Pluk salaten og anret på tallerknen sammen med urterne.

I en tykbundet gryde varmes olien (1 l rapsolie) op, og de indbagte rejer kommes i og friteres, til de er gyldne og sprøde. Dryppes af på køkkenrulle og anrettes på salaten. Eller tilbered i forvarmet ovn på bageplade ved 225°C i 15-18 minutter, indtil rejerne er gyldne og sprøde, vendes efter 8 minutter.

Server med urtedressingen og lune flutes.
